Anyone have any idea what an unsigned Humble Bundle XO 1 would be worth?

I suspect a little bit.
Almost ALL are signed (as you know), which means that any graded copies would be CGC Qualified Green Label (or CBCS Verified Red Label).
This copy could be one of the only (or THE only) Universal Blue Label; or IF signed/witnessed, it could be one of the only (or THE only) Signature Series Yellow Label.
This may seem insignificant to some; however, it might mean the world to others. From a Registry perspective, it can be quite significant.

I agree with Jesse. It would be a new market to itself in a blue label, and the combination of "currently unique" is factored against the calculated risk of "someday there might be many" or "what if it's the only one for years".
Markets in that situation are very hard to predict.
